Hello, and welcome to my most nostalgic recipe ever!
When I was in college, there was this small coffee shop on campus that had a seasonal drink that I lived for. Any time I had a break between classes or was studying on campus, I’d grab a bagel & this drink. It was an apple cider latte sort of thing. I’m blanking on the name, but it was something super cheesy like “apple blast.” Every time fall and winter roll around, I crave that warm, apple cider-y, coffee-tasting, creamy, warm drink!
I’m almost positive that drink was not vegan, so I decided this fall, I would try and test my own veganized version out.
I was not disappointed.

- 1/2 cup hot brewed fair trade* coffee
- 1/2 cup spiced apple cider (sweetened)
- 1/3 cup unsweetened organic** soy milk
- apple pie spice for garnish
* It’s important to buy fair trade coffee. I’d even argue that most conventional coffee is not actually vegan. Americans drink a lot of coffee, and to keep it cheap, a lot of beans are sourced from poor countries where child labor is common, the conditions are unsafe and extremely unhealthy, and they make very little pay. **You don’t have to buy organic soy milk, but soy is one of the most pesticide-ridden crops in the US. I don’t buy everything organic, but always soy milk.
- Brew your coffee per instructions.
- Measure out 1/2 cup apple cider and pour it into your mug.
- While your coffee is brewing, warm up soy milk in a small sauce pan, without letting it reach a boil. You just want it to be nice and warm.
- Pour soy milk into a separate bowl or cup and use a hand-powered frother to foam up your soy milk. (If you don’t have a hand frother like mine, you can put it in the blender and blend on high for 30 seconds. It should be a little foamy on top).
- When your coffee is done, add 1/2 cup of it to your apple cider in your mug and stir together.
- Finally, pour soy milk and foam on top and garnish with apple pie spice.
